Meet the Speaker
Justin Khanna spent nearly 10 years training at some of the best Michelin-starred restaurants in the world.
Since then, he’s distilled those lessons into a structured framework that you can use to increase your creative output, avoid the “blank canvas” feeling, and ultimately make your ideas grow beyond just you.
He’s the founder of Repertoire, the modern hospitality education company focused on creating tools and resources to empower the next generation of builders in the industry.
When he’s not cooking on YouTube or playing tennis, you’ll find him advising food & media start-ups, hosting a weekly podcast, and coaching restaurant owners to improve their business.

A 2.5 hour combination of Keynote presentation and Interactive Plating Exercise (yes, the ingredients are already prepped, there’s no smoke or cooking required, and you can enjoy your plate-up at the end!)
We also bring all service ware, cleaning supplies, plating utensils, and a laptop to share the digital assets.
If you need any A/V setup, that’s available at an additional charge.

The entire experience is split into 3x, 45 minute sections.
It’s a Keynote “sandwich”, of sorts, with an Interactive Plating Exercise in the middle to engage folks, put these lessons to work, and enjoy some delicious flavor combinations.
Expect ~2.5 hours, but we recommend up to 3 hours just to allow for Q&A at the end.

Yes, the content of the Keynote remains exactly the same if you have a remote event happening (or team members that need to join from their device).
Then, we provide a shopping list of ready-to-go ingredients that don’t require cooking and allow for participation in the Interactive Plating Exercise.
Since we aren’t able to provide the supplies, think of them like “art supplies” that are selected to be experimented with during the plating portion and NOT eaten.
We do this because seasonality, supply chain logistics, and geographical availability boils the list down to only a select few options. It’s not fun to do this kind of exercise with lackluster supplies, so we know what works.
If you’re well-versed in cooking or have other pantry items that you’d prefer to use, you can take a look at the list and certainly improvise to create something delicious!
However, the remote activity is focused on teaching plating principles that you can apply to your next dinner party or recipe execution.

The Interactive Plating Exercise is made up of 10 different prepped components, that can be combined in a myriad of combinations.
All guests will be able to create a plated dish to enjoy that accommodates:
-Vegan diets (no shellfish, no red meat, no pork)
-Gluten restrictions
-No Dairy/Lactose
-No nutsHowever, if you’ve got other restrictions outside of this list, or have someone who has a very serious allergy that we should be aware of, please let us know.

The Keynote will require a screen to present on that is easy to read from all attendees. If you’ve got a setup that’s ready to connect to, you’re all set; but if you need assistance in coordinating an A/V setup, just let us know!
Seating for attendees is not included, but we’re able to coordinate it for you through a preferred rental partner.
The plating exercise requires 4x, 6-foot tables. All plating utensils, plates, napkins, forks/spoons, cleaning supplies, and ingredients are included.
Let’s talk time - we’ll need access to the venue 1 hour before the start of the experience for setup, as well as ~30-45 minutes afterwards for pack down.
Lastly, if you plan on having remote folks join, we’ll need a stable WiFi connection. No internet is required if all attendees will be in-person.
